Fish with Zucchini and Red Pepper
|Minced celery||1⁄4 Cup (4 tbs)|
|Minced onion||1⁄2 Cup (8 tbs)|
|Shredded zucchini||1⁄2 Cup (8 tbs)|
|Parsley flakes||1 Tablespoon|
|Lemon juice||2 Tablespoon|
|Black pepper||1⁄4 Teaspoon|
|Fish fillets||1 Pound|
|Sweet red pepper||1 Small, cut into thin strips|
In small bowl combine celery, onion, zucchini, parsley flakes, lemon juice and black pepper.
Place fish fillets in 12x8-in baking dish.
Top with vegetable mixture.
Arrange red pepper strips over vegetables.
Cover with wax paper.
Microwave at 50% (Medium) 10 to 15 minutes, or until fish flakes easily with fork, rearranging fillets once during cooking.
Let stand, covered, 2 to 3 minutes.
