Spiced Stewed Eel

Ingredients
  Eel 2 Pound
  Salt 1⁄2 Teaspoon
  Parsley 1 Tablespoon, minced
  Water 1
  Butter 1 Tablespoon
  Flour 1 Tablespoon
  Pepper 1⁄8 Teaspoon
Directions

Skin and clean eel; remove all fat carefully from inside.
Cut eel into 1 1/2-inch lengths, place in saucepan with salt, parsley and water to cover; cover pan closely and simmer for 1 hour or until tender.
Remove eel.
Blend remaining ingredients together, add to liquid in pan and cook 3 minutes longer.
Pour over eel.
Serves 6.
