Citrus Salmon Steaks
|Salmon steaks/Halibut steaks||1 Pound (Fresh / Frozen, Cut 1 Inch Thick)|
|Finely shredded orange peel||1 Teaspoon|
|Orange juice||1⁄2 Cup (8 tbs)|
|Snipped parsley||1 Tablespoon|
|Cooking oil||1 Teaspoon|
|Dried dill weed||1⁄2 Teaspoon|
|Non stick cooking spray||1|
|Thin orange slices||4|
Thaw fish, if frozen.
Cut fish into four portions.
Place in a shallow baking dish.
For marinade, combine orange peel, juice, parsley, oil, dillweed, salt, and pepper; pour over fish.
Cover and marinate in the refrigerator for 45 minutes, turning once.
Remove fish, reserving marinade.
Spray a wire grill basket with nonstick coating, then place fish in the basket.
Grill over medium-hot coals for 5 to 8 minutes or till lightly browned.
Brush with marinade, then turn basket.
Grill for 5 to 8 minutes more or till fish flakes easily when tested with a fork, brushing often with marinade.
Garnish with orange slices, if desired.
