Sweet and Sour Fish
|Water||1 1⁄2 Cup (24 tbs)|
|White vinegar||1 Cup (16 tbs)|
|Sugar||3⁄4 Cup (12 tbs)|
|Carrots||2 , cut into 1/4-inch rounds|
|Mackerel/Cod steaks||2 Pound, filleted and cut into 1 -inch cubes|
|Onion||1 Medium, sliced into rounds|
|Celery stalks||2 , cut into 2 inch pieces|
Combine water, vinegar, sugar and salt in large saucepan and bring to boil.
Reduce heat, add carrots, cover and simmer until crisp-tender .
Add fish and simmer uncovered until opaque.
Remove from heat and immediately add onion and celery.
Marinate overnight in refrigerator, stirring occasionally.
When ready to serve, arrange fish and vegetables on platter and pass marinade separately
