Baked Stuffed Pike

Ingredients
  Whole fish 2 Pound, dressed
  Salt To Taste
  Stuffing 2 Cup (32 tbs)
  Melted butter 3 Tablespoon (For Basting)
  Butter 1⁄4 Cup (4 tbs)
  Onion 2 Tablespoon, grated
  Soft bread cubes 2 Cup (32 tbs) (Slightly Moist Prepared Stuffing May Be Used. If So Eliminate Thyme In Recipe)
  Lemon juice 2 Tablespoon
  Lemon rind 2 Teaspoon, grated
  Thyme 1⁄4 Teaspoon
  Salt 1⁄4 Teaspoon
  Ground pepper 1⁄4 Teaspoon
Directions

Salt inside of fish.
Melt butter for stuffing and saute onions until tender.
Add remaining ingredients.
Fill fish with stuffing securing edges with wooden picks.
Place in shallow baking dish and brush with melted butter.
Bake at 450° for 10 minutes.
Reduce heat to 350° and continue baking for 30 to 40 minutes longer.
Baste with butter during baking period.
Remove picks and garnish with parsley and lemon wedges.
