Fish A La Grecque
|Potatoes||2 Large, peeled and sliced|
|Onion||1 , chopped|
|Fish fillets||1⁄2 Pound|
|Tomatoes||2 Large, sliced|
|Water||1⁄2 Cup (8 tbs)|
|Vegetable oil||2 Tablespoon|
|Freshly ground black pepper||To Taste|
|Finely chopped fresh parsley||1⁄2 Cup (8 tbs)|
Preheat oven to 300°F.
Lay the potato slices on the bottom of a casserole dish and sprinkle with chopped onion.
Place fish fillets on top and cover with sliced tomato.
Pour over the water and oil and sprinkle with pepper and parsley.
Bake 30 minutes, or until fish flakes.
