Baked Fish, Cheese And Spinach

Ingredients
  Drained cooked well seasoned spinach 3 Pound (3 Cups)
  Fish fillets 1 1⁄2 Pound
  Dry mustard 1⁄4 Teaspoon
  Salt 1 1⁄4 Teaspoon
  Granulated sugar 1⁄4 Teaspoon
  Paprika 1⁄8 Teaspoon
  Processed american cheddar cheese 1 Cup (16 tbs), grated
  Egg 1 , beaten
  Flour 2 Tablespoon
  Butter/Margarine/fat/salad oil 1 Tablespoon
  Pepper 1⁄4 Teaspoon
  Bottled thick meat sauce 1⁄2 Teaspoon
  Bottled milk/1/2 cup evaporated milk and 1/2 cup water 1 Cup (16 tbs)
Directions

Arrange spinach in a large, shallow, greased baking dish.
Arrange fish fillets over spinach and sprinkle with the mustard, 1/2 teasp of the salt, sugar, and paprika combined.
Bake in a moderate oven of 350ºF for 30 min.
Meanwhile combine cheese, egg, flour, butter, pepper, meat sauce, and remaining 3/4 teasp salt in a double boiler.
Gradually add milk and cook over boiling water until smooth and thickened, stirring constantly.
Pour sauce over fish and brown under the broiler.
