Pickled Herrings

Ingredients
  Herrings 3 Medium (Or 2 Large Size)
  Onion 1 Large, sliced
  Vinegar 1⁄2 Pint
  Water 1⁄8 Pint
  Brown sugar 1 Tablespoon
  Bay leaves 3
  Mixed whole spices 1 Teaspoon
  Peppercorns 12
  Thin lemon slices 6
  Sour cream 2 Tablespoon
Directions

Clean herrings, do not remove skin.
Place whole herrings or sections into a quart jar.
Add onion.
Bring to a quick boil the vinegar, water, sugar and cool until lukewarm.
Add liquid to jar with bay leaves, spices, peppercorns and lemon slices.
Add sour cream, if used, and stir in lightly, or shake jar to distribute.
Cover and leave to stand 24 hours before serving.
