Broiled Whole Fish

Ingredients
  Whole fish 3 Pound, dressed
  Salt 1 1⁄2 Teaspoon
  Pepper 1⁄4 Teaspoon
  Butter/Margarine/oil 2 Tablespoon
  Anchovy paste 3 Tablespoon
  Lemon juice 2 Tablespoon
  Chopped parsley 1 Tablespoon
Directions

1. Start broiler, set at Moderate, 350° F. Rub the grids in the broiler pan with fat.
2. Rinse the fish inside and out; rub half the salt inside the fish, sprinkle the rest of it over the outside and dust with pepper.
3. Place fish on the broiler rack in the broiler oven. Dot the fish with butter or margarine, or sprinkle with oil, and broil about 10 minutes. Turn, sprinkle or add more butter or margarine and broil another 10 minutes.
4. Remove from the broiler and spread with a mixture of anchovy paste and lemon juice.
