Scalloped Salmon Or Tomato Herring
|Canned salmon/Tomato herring||1 Pound, drained|
|Dill weed||1⁄2 Teaspoon|
|Black pepper||To Taste|
|Enriched white bread slices||4 , toasted and made into crumbs|
|Lemon juice||1 Tablespoon|
|Skim milk||1 Cup (16 tbs)|
|Evaporated skimmed milk||1⁄2 Cup (8 tbs)|
|Lemon wedges||4 (For Garnish)|
Layer half the salmon in a 1-quart baking dish.
Sprinkle with dill weed and pepper.
Top with half the crumbs.
Add remaining salmon; sprinkle with lemon juice and cover with remaining crumbs.
Combine skim and evaporated skimmed milk in a measuring cup and pour over fish.
Dot evenly with margarine.
Bake at 350°F.for 35 minutes or until top is golden brown.
Garnish with lemon wedges.
