Sweet and Sour Fish
|Fish fillets||12 Ounce, cut into 1 1/2-inch pieces (About 1/2 Inch Thick)|
|Green pepper||1 Small, cut into 1/2-inch strips|
|Canned unsweetened pineapple chunks||20 Ounce, drained, reserve juice (1 Can)|
|Unsweetened pineapple juice||1⁄2 Cup (8 tbs)|
|Reduced sodium soy sauce||1 Tablespoon|
|No-salt ketchup||1 Tablespoon|
|Cider vinegar||2 Teaspoon|
|Garlic powder||1⁄8 Teaspoon|
|Ground ginger||1⁄8 Teaspoon|
|Tomato||1 Medium, cut into 8 wedges|
|Sliced green onion||1 Tablespoon|
In 2-quart casserole, combine fish pieces and green pepper.
Microwave at High for 4 to 7 minutes, or until fish flakes easijy with fork, stirring gently once.
Add pineapple chunks.
Place 1/2 cup pineapple juice in 1-quart casserole.
Stir in soy sauce, ketchup, honey, cornstarch, vinegar, garlic powder, ginger, pepper and turmeric until blended.
Microwave at High for 2 1/2 to 4 minutes, or until mixture thickens and bubbles, stirring 2 or 3 times.
Add tomato and onion to fish and green pepper.
Gently stir to coat.
Microwave at High for 2 to 4 minutes, or until heated through, stirring once.
