Croakers

Ingredients
  Croakers 4
  Salt 1⁄2 Teaspoon
  Black pepper 1⁄4 Teaspoon
  Boiling water 1 Cup (16 tbs) (Adjust Quantity As Needed)
  Butter/Margarine 2 Tablespoon
For sauce
  Sour cream 1 Cup (16 tbs)
  Butter 2 Tablespoon
  Minced water cress 1 Tablespoon
  Paprika 1⁄8 Teaspoon
Directions

1. Start oven, set at Moderate, 375° F. Rub a shallow baking dish with margarine or butter.
2. Rinse the cleaned fish, lay them in the baking dish; season with the salt and pepper. Pour a little hot water into the dish around them.
3. Bake 15 to 20 minutes; baste every 5 minutes with the melted butter or margarine stirred into 1/4 cup boiling water.
4. Scald the cream with the butter in the upper part of a double boiler. Add the water cress, stir and pour over the fish in the baking dish. Bake another 5 minutes. Sprinkle with paprika and serve.
