Classic Fish Fillets Florentine
|Sole fillets||32 Ounce|
|Dry white wine||1⁄2 Cup (8 tbs)|
|Frozen chopped spinach||20 Ounce, thawed and drained (2 Package)|
|Ground pepper||To Taste|
|Canned cream of shrimp soup||10 3⁄4 Ounce (1 Can, Undiluted)|
|Parmesan cheese||1 Tablespoon, grated|
Preheat oven to 350°F.
Butter an 8-inch square baking dish.
Poach fish in wine 4 to 5 minutes; drain.
Spread spinach evenly in dish and season with salt and pepper to taste.
Arrange fish over spinach and top with soup.
Dot with butter and sprinkle with cheese and paprika.
Bake 20 minutes.
