|Smelts||18 Ounce (500 Gram)|
|Lemon||1 , juiced|
|Parsley||1 Teaspoon, roughly chopped|
|Flour||1 1⁄4 Ounce (30 Gram)|
|Oil||1 3⁄4 Pint (For Deep Frying, 1 Liter)|
1. Heat the oil.
2. Wash and dry the smelts. Place the flour on a plate and roll the smelts in it. Then plunge them into hot oil and cook for 2 minutes. Drain well.
3. Mix the lemon juice with the parsley. Serve this sauce with the smelts.
