Deep-Fried Smelts

Ingredients
  Smelts 18 Ounce (500 Gram)
  Lemon 1 , juiced
  Parsley 1 Teaspoon, roughly chopped
  Flour 1 1⁄4 Ounce (30 Gram)
  Oil 1 3⁄4 Pint (For Deep Frying, 1 Liter)
Directions

1. Heat the oil.
2. Wash and dry the smelts. Place the flour on a plate and roll the smelts in it. Then plunge them into hot oil and cook for 2 minutes. Drain well.
3. Mix the lemon juice with the parsley. Serve this sauce with the smelts.
