Broiled Scrod

Ingredients
  Scrod 3 Pound (4 Small Size)
  Oil 1⁄4 Cup (4 tbs)
  Fine dry bread crumbs 1 Cup (16 tbs)
  Salt 1 Teaspoon
  Pepper 1⁄4 Teaspoon
Directions

1. Have the fish cleaned and split with head, tail and most of the backbone removed. Wipe them with a clean, damp cloth.
2. Dip the fish in the oil, then in the fine bread crumbs mixed with salt and pepper.
3. Place inside-down on the greased broiler rack and broil about 10 minutes; turn them and broil the other side the same length of time. Baste frequently while broiling with the remains of the oil.
