Fisherman's Supper

Ingredients
  Olive oil 4 Tablespoon
  New potatoes 6 Medium, scrubbed, sliced into eighths
  Yellow onions 3 Large, cut into 1/4-inch slices
  Green bell peppers/Red bell pepper 3 Medium, cored, seeded, and sliced into eighths
  Sea trout fillets/Other firm-fleshed fish such as orange roughy / monk fish 2 1⁄2 Pound, cut into 2-inch pieces
  Salt To Taste
  Freshly ground black pepper To Taste
Directions

Preheat oven to 350°.
Spread oil evenly on the bottom of casserole.
Add potatoes, onions, peppers, fish, and seasonings; cover dish and bake 20 minutes.
Remove cover, raise heat to 400°, stir gently, and bake 10 to 15 more minutes, or until fish and vegetables begin to brown.
