|Olive oil||4 Tablespoon|
|New potatoes||6 Medium, scrubbed, sliced into eighths|
|Yellow onions||3 Large, cut into 1/4-inch slices|
|Green bell peppers/Red bell pepper||3 Medium, cored, seeded, and sliced into eighths|
|Sea trout fillets/Other firm-fleshed fish such as orange roughy / monk fish||2 1⁄2 Pound, cut into 2-inch pieces|
|Freshly ground black pepper||To Taste|
Preheat oven to 350°.
Spread oil evenly on the bottom of casserole.
Add potatoes, onions, peppers, fish, and seasonings; cover dish and bake 20 minutes.
Remove cover, raise heat to 400°, stir gently, and bake 10 to 15 more minutes, or until fish and vegetables begin to brown.
