Fish In Sweet And Sour Sauce

Ingredients
  Minced onion 15 Milliliter (1 Tablespoon)
  Garlic 1 Clove (5 gm), crushed / minced
  Hot chilies 2 , seeded and finely sliced
  Ginger root slice 1 , grated (Green Colored)
  Sherry 45 Milliliter (3 Tablespoon)
  Firm white fish fillets 1 Pound (4 Pieces, 450 Gram)
  Canned tomatoes 7 Ounce, drained and sieved / strained (3/4 Cup / 200 Gram)
  Tomato puree 15 Milliliter (1 Tablespoon, Paste)
  Sugar 1 Pinch
  Shredded spring onions 1 Tablespoon (Scallions)
  Tomato slices 4
Directions

For the marinade, mix together in a dish the onion, garlic, chillies (chilis), ginger and sherry. Lay the fish in the marinade and leave for an hour, turning occasionally.
Mix together the tomatoes, tomato puree (paste) and sugar and pour over the fish. Cover with vented cling film (plastic wrap) and cook for about 5 minutes, until done, turning once.
Serve garnished with finely shredded spring onions (scallions) and tomato slices.
