Fried Fish Roe
|Beaten egg||1 Tablespoon|
|Fresh breadcrumbs||2 Ounce (1 1/2 Cups / 50 Gram, Adjust Quantity As Needed)|
|Butter||1⁄2 Ounce (1 Tablespoon / 15 Gram)|
Sprinkle flour over the roe to coat it evenly. Dust off the excess. Roll it in egg, then in breadcrumbs, pushing them on with your fingers.
Heat a browning dish to maximum according to the manufacturer's instructions. Put the butter on the dish and, wearing oven gloves, tilt it so that it is covered in hot fat.
Put the roe on the dish and cook for 30—45 seconds on each side.
Let it stand for 1 minute, then serve with lemon wedges.
