Poached Fish Fillets With Soy Dressing

Ingredients
For sauce
  Soy sauce 2 Tablespoon
  Shao hsing wine/Dry sherry 1 Tablespoon
  Sesame oil 2 Teaspoon
  Thin fresh ginger slices 4
  Green onions and tops 2 , cut in half
  Firm white fish fillets 1 Pound (Such As Cod / Halibut / Sea Bass, 3/4 Inch Thick)
Directions

Place sauce ingredients in a small saucepan.
Whisk until blended and set aside.
Cooking Pour water into a wide frying pan to a depth of 2 inches.
Add ginger and green onions and bring to a boil.
Reduce heat so water barely simmers.
Add fish, cover, and simmer for 5 minutes or until center of fish is opaque.
Lift out fish with a slotted spatula, drain briefly, and place on a serving platter.
Bring sauce ingredients to a boil.
Drizzle sauce over fish.
