Speedy Broiled Fish
|Fish fillets||1 Pound|
|Soy sauce||2 Teaspoon|
|Salad oil||2 Tablespoon|
|Lemon juice||2 Tablespoon|
|Parsley||2 Tablespoon, snipped|
Cut fillets into serving pieces; season with salt and pepper.
Combine soy sauce and oil.
Arrange fish on an oiled grill or in an oiled wire broiler basket.
If fish tends to be dry, broil on piece of heavy aluminum foil.
Slit foil at regular intervals and oil lightly.
Broil pieces of fish till golden brown, about 5 to 8 minutes on each side.
Baste frequently with soy mixture.
Place broiled fish on a warm platter.
Heat remaining soy sauce mixture; add lemon juice and parsley.
Pour sauce over fish and garnish with parsley.
