Sauteed Pickerel

  Butter 1 Tablespoon
  Olive oil 1 Tablespoon
  Pickerel fillets 4
  Red pepper 1 , julienned
  Zucchini 1 , julienned
  Pine nuts 1⁄2 Cup (8 tbs)
  Grated orange rind 2 Tablespoon
  Lemon juice 1 Tablespoon

Preheat oven to 375 °F (190 °C).
Heat butter and oil in ovenproof saute pan over medium heat. Add fish and season well; cook 3 minutes.
Turn filets over. Place pan in oven and continue cooking 6 to 8 minutes or adjust time according to thickness of filets.
Remove fish from saute pan and keep hot.
Return saute pan to burner. Add red pepper and zucchini; cook 4 minutes over high heat.
Add remaining ingredients and season well. Cook 3 more minutes. Pour vegetables and juices from pan over fish and serve.
