Simple Simon Fish Grill
|Whitefish/Trout / similar fresh water fish||2 Pound, cleaned|
|Butter/Margarine||1⁄2 Cup (8 tbs)|
|Coriander seed||1 Teaspoon, crushed|
|Lemon juice||2 Tablespoon|
|Yogurt||1 Cup (16 tbs)|
|Fennel leaves/Dill / other leafy herb||1 Tablespoon|
Salt the cleaned fish.
Melt butter and mix in salt, crushed coriander, cardamom, pepper, lemon juice, and yogurt.
Coat fish inside and out with this mixture.
Place in a wire broiler basket and cook over coals till fish browns on both sides and flakes when tested with a fork, about 25 to 30 minutes.
Brush fish often with sauce.
Ten minutes before the end of cooking time, make a bed of a bunch of fennel, dill, or other leafy herb on grill top and lay fish on the greens.
Grill till herbs smolder and flavor the fish, turning once.
Heat remaining sauce on edge of grill to pass in bowl.
