Cod's Roe Ramkins
|Cooked cods roe||1⁄2 Pound|
|Fresh bread crumbs||2 Cup (32 tbs) (loosely packed for measuring)|
|Eggs||2 , separated|
|Cream||1⁄4 Cup (4 tbs)|
|Lemon||1⁄2 , juiced|
|Chopped parsley||1 Tablespoon|
Mash the roe and mix with breadcrumbs, mace and seasonings.
Add the parsley and lemon juice and the beaten egg yolks mixed with the cream.
Leave for 10 minutes until the breadcrumbs have absorbed all the moisture, then add the stiffly beaten egg whites.
Put either into individual greased dishes or one big one and bake in a hot oven (400Â° F. electric; gas regulo 5) for about 15 minutes for the small ones and 30 minutes for the large one, or until they have puffed up and are golden brown.
