Oven Fried Fish

  Pickerel fillets/Dore 2 Pound
  Buttermilk 1 Cup (16 tbs)
  Worcestershire sauce 1⁄4 Teaspoon
  Salt 2 Teaspoon
  Fine dry bread crumbs/Cracker crumbs 1 Cup (16 tbs)
  Paprika 1 Teaspoon
  Melted butter 1⁄4 Cup (4 tbs)
  Mustard sauce 2 Tablespoon

Cover fillets with mixture of buttermilk, Worcestershire sauce and salt and let stand 30 minutes.
Heat oven to 525 degrees.
Combine crumbs and paprika.
Lift fish out of milk and shake to remove excess moisture.
Dip each piece in crumbs to coat both sides.
Lay in a large flat baking dish in a single layer.
Drizzle butter over.
Bake about 15 minutes or until fish flakes easily with a fork and is golden brown.
