1. When serving fish hot, stuff if desired.
2. Melt butter in microwave oven. Brush entire fish with melted butter. Place fish on a roast rack set in a 2-quart glass baking dish. Cover head and tail with foil.
3. Insert Temperature Probe in fish just above the gill into the meatiest area parallel to backbone (be sure it does not touch foil around head). Have the probe in the side of the fish closest to the dish. Cover tightly with plastic wrap. Cook in microwave oven set at 140°F and at HIGH.
4. Remove from oven. Allow to stand covered 5 minutes before serving. To serve fish, slide back skin and slice or serve with a spoon. If serving fish cold, accompany with Cucumber Sauce or mayonnaise and dill or tarragon.
