Fish With Vegetables And Olives

Ingredients
  Fish fillets 1 Pound, cut into serving pieces (Fresh Or Frozen, Defrosted)
  Salt 1 Teaspoon
  Pepper 1⁄4 Teaspoon
  Paprika 1⁄4 Teaspoon
  Green pepper 1 , cut into rings
  Onion 1 Small, thinly sliced
  Lemon juice 2 Tablespoon
  Garlic clove 1 Small, finely chopped
  Tomato 1 Medium, sliced
  Sliced pitted ripe olives 1⁄4 Cup (4 tbs)
Directions

1. Arrange fish with thickest parts to outside edge in baking dish, 8x8x2 inches. Sprinkle with salt, pepper and paprika. Top with green pepper rings and onion slices. Mix lemon juice and garlic; pour over peppers and onions. Cover tightly and microwave on high (100%) 3 minutes.
2. Top with tomato slices and sprinkle with olives. Rotate baking dish 1/2 turn. Cover tightly and microwave on high (100%) until fish flakes easily with fork, 4 to 6 minutes. Let stand 3 minutes. Garnish with lemon wedges if desired.
