Fish Curry

  Butter 32 Ounce
  Onions 2 Large, peeled and chopped
  Curry powder 2 Tablespoon
  Plain flour 2 Ounce
  Chicken stock 1 Pint
  Milk 1 Pint
  Apples 2 Small, peeled, cored and chopped
  Tomatoes 4 , skinned and chopped
  Sultanas 4 Ounce
  Salt To Taste
  Freshly ground black pepper To Taste
  Cod fillets/Haddock / similar white fish 3 Pound, skinned and cut into 1 inch cubes

Melt the butter in a saucepan and fry the onions gently for 5 minutes without browning. Stir in the curry powder and fry it for 2 to 3 minutes, then add the flour and cook for a further 2 to 3 minutes. Remove the pan from the heat and gradually stir in the stock and milk. Bring to the boil, stirring, and simmer until the sauce thickens. Add the apples, tomatoes, sultanas and salt and pepper to taste. Cover and simmer for 15 minutes. Add the fish, stir well and simmer for a further 10 minutes or until the fish is tender. Add more salt and pepper if necessary and serve with boiled rice.
