|Salt pork||1 Pound, diced|
|Canned tomatoes||28 Ounce (1 Can / 3 1/2 Cups)|
|Red pepper||To Taste|
|Black pepper||To Taste|
|Unsalted crackers||1⁄2 Pound, crumbled (Plain)|
|Eggs||12 , beaten|
|Butter||1 Cup (16 tbs)|
Simmer fish in water to cover for 10 minutes.
Drain; reserve broth.
Remove bones from fish.
Brown salt pork, add sliced onions, and saute until golden.
Pour off fat.
Put fish, salt pork, onions, and broth into kettle.
Cook, covered, over low heat for 30 minutes or longer.
Season to taste.
Stir vigorously while adding crackers, eggs, and butter.
Simmer for 2 to 3 minutes longer.
