Fish Mornay

Ingredients
  Cod fillets/Haddock fillets 1 Pound
  Milk 1⁄4 Pint
  Water 1⁄4 Pint
  Bay leaf 1
  Onion 1 Small
  Shrimp 1⁄2 Pound (Few Shrimps Required)
  Butter 1 1⁄2 Ounce
  Flour 2 Tablespoon
  Salt To Taste
  Pepper To Taste
  Grated cheese 2 Ounce
  Breadcrumbs 2 Tablespoon
  Butter 1 Ounce (Extra Required)
Directions

Wipe the fish. Combine milk, water, bayleaf and half the chopped onion in saucepan.
Poach fish in this liquid until tender, drain, reserving liquid.
Flake fish coarsely.
Remove bayleaf from liquid.
Combine fish and shrimps.
Melt butter in saucepan, saute remaining chopped onion for 1 minute, stir in flour, cook 1 minute. Remove from heat.
Gradually add reserved liquid.
Return to heat, stir until sauce boils and thickens; cook 5 minutes, stirring constantly.
Season to taste, stir in cheese, leaving approximately 2 tablespoons for topping.
Fold in fish mixture, spoon mixture into greased ovenproof dish.
Sprinkle with mixture of breadcrumbs and remaining cheese.
Dot with extra butter; brown under hot grill or in oven, Mark 7, 425°F.
