Garfish With Corn Meal

Longnose gar may not be the first fish you put on the dinner table, but not because of lack of flavor. This rough fish, while it is labor-intensive to clean, is rather delicious.
Ingredients
  Garfish 2 Pound
  Peanut oil 1⁄4 Cup (4 tbs)
  White corn meal 1 Cup (16 tbs)
  Salt and pepper To Taste
Directions

GETTING READY
1. Cut the garfish as shown in the video.

MAKING
2. In a plate, mix together white corn meal, salt and pepper.
3. In a pan, heat peanut oil, dredge the pieces in white corn meal and fry until it turns golden brown.

SERVING
4. Serve with salad and dip of your choice.
