Grouper Fingers With Lemon Pepper Mayonnaise

  Grouper fillet 1 1⁄2 Pound
  Nonfat mayonnaise 1⁄4 Cup (4 tbs)
  Water 1 Tablespoon
  Grated lemon rind 3⁄4 Teaspoon
  Lemon juice 1 Tablespoon
  Soft whole wheat breadcrumbs 3⁄4 Cup (12 tbs), toasted
  Coarsely ground pepper 1 Teaspoon
  Garlic powder 3⁄4 Teaspoon
  Vegetable cooking spray 1
  Lemons 3
  Lemon pepper mayonnaise 1⁄2 Cup (8 tbs) (Adjust Quantity As Needed)

Cut fillets diagonally into 1-inch-wide strips.
Combine 1/4 cup mayonnaise and next 3 ingredients; stir well.
Brush both sides of strips with mayonnaise mixture.
Combine breadcrumbs, pepper, and garlic powder.
Dredge strips in breadcrumb mixture.
Place on a baking sheet coated with cooking spray.
Bake at 425° for 25 minutes or until fish is golden and flakes easily when tested with a fork.
Using a small sharp knife, make continuous V-shaped cuts into the centers and around the middles of 3 lemons, if desired.
Gently twist halves apart.
Spoon 1 tablespoon of Lemon-Pepper Mayonnaise into each lemon crown, and top each with a parsley sprig, if desired.
