Mackerel With Cider Sauce

Ingredients
  Mackerel   4
  Cider 1⁄4 Pint
  Tarragon vinegar 2 Tablespoon
  Bay leaf 1
  Salt To Taste
Directions

Remove heads of fish, clean and remove backbone.
Put into a fireproof dish with cider, vinegar, bay leaf, lemon juice and bouquet garni.
Sprinkle lightly with salt and pepper.
Cover and cook in a moderate oven, Mark 4, 350°F. for 25 to 30 minutes.
