Mr. VahReVah let me tell you that there are many indians especially from the North who prepare their food with minimal spices. Not many indians will eat a tomato chutney loaded with green chilli. You are killing those tomatoes with green chillies. I think your recipes cater more to the south indian palate than the north indian palate. I watch your videos mostly for the handy hints that you give out. Thanks.

Sanjay is not from North India, but is from Hydrabad. I use as many or more chiles than he does. Capsicum is good for your health and might I add the more you eat them the more you wnt. I love Chef Vah's recipes! It is quite easy to adust the amount of capscum in a recipe to your taste. I always tell people that when I am teaching Thai cooking. Adjust and balance flavours to your personal taste. He is a fabulous teacher! That is the wonderful thing about cooking it is such a creative art form and we are the artist of the cuisine welding spices and ingredients in our way giving each recipe our personal signature.
