Fish With Zucchini & Red Pepper
|Celery||1⁄4 Cup (4 tbs), finely chopped|
|Onion||1⁄2 Cup (8 tbs), finely chopped|
|Zucchini||1⁄2 Cup (8 tbs), shredded|
|Parsley flakes||1 Tablespoon|
|Lemon juice||2 Tablespoon|
|Black pepper||1⁄4 Teaspoon|
|Fish fillets||1 Pound|
|Sweet red pepper||1 Small, cut into thin strips|
In small bowl, combine celery, onion, zucchini, parsley flakes, lemon juice and black pepper.
Place fish fillets in 12 x 8-inch square baking dish.
Top with vegetable mixture.
Arrange red pepper strips over vegetables.
Cover with wax paper.
Microwave at 50% (Medium) for 10 to 15 minutes, or until fish flakes easily with fork, rearranging fillets once.
Let stand, covered, for 2 to 3 minutes.
