Fish Fillets With Spinach

  Margarine/Butter 2 Tablespoon
  Flour 2 Tablespoon
  Bouillon 1 Teaspoon
  Ground nutmeg 1 Dash
  Ground red pepper 1 Dash
  Pepper white 1 Dash
  Milk 1 Cup (16 tbs)
  Shredded swiss cheese/Cheddar cheese 2⁄3 Cup (10.67 tbs)
  Frozen chopped spinach 10 Ounce, thawed and well drained (1 Package)
  Lemon juice 1 Tablespoon
  Fish fillets 1 Pound, cut into serving pieces
  Salt 1⁄2 Teaspoon
  Grated parmesan cheese 2 Tablespoon
  Paprika To Taste

Heat margarine over low heat until melted; stir in flour, bouillon, nutmeg, red pepper and white pepper.
Cook over low heat, stirring constantly, until mixture is smooth and bubbly; remove from heat.
Stir in milk.
Heat to boiling, stirring constantly.
Boil and stir 1 minute.
Add Swiss cheese; cook, stirring constantly, just until cheese is melted.
Place spinach in ungreased oblong baking dish, 12 x 7 1/2 x 2 inches, or square baking dish, 8x8x2 inches; sprinkle with lemon juice.
Arrange fish on spinach; sprinkle with salt.
Spread sauce over fish and spinach.
Cook uncovered in 350° oven until fish flakes easily with fork, 20 to 25 minutes.
Sprinkle with Parmesan cheese and paprika.
