Fish A La Reine

  Chopped fresh mushrooms 2 Ounce (1/2 Cup)
  Butter 2 Tablespoon
  All purpose flour 2 Tablespoon
  Salt 3⁄4 Teaspoon
  White pepper 1⁄8 Teaspoon
  Milk 1 1⁄4 Cup (20 tbs)
  Fish stock 1 Cup (16 tbs)
  Beaten egg yolks 2
  Fish 1 Pound, cooked and broken into small pieces
  Snipped parsley 2 Tablespoon
  Frozen patty shells 6 , baked

In medium saucepan cook the mushrooms in butter till tender.
Blend in flour, salt, and white pepper.
Add milk and fish stock all at once.
Cook quickly, stirring constantly, till mixture thickens and bubbles.
Remove from heat.
Gradually blend a moderate amount of milk mixture into egg yolks.
Return mixture to saucepan and cook 2 minutes more, stirring constantly.
Fold in cooked fish and snipped parsley.
Cover and cook over low heat till heated through.
