Great Catch Steamed Fish
|Dressed fish||2 Pound (Ocean Trout Or Lake Fish)|
|Bacon strip||3 , minced|
|Dried mushrooms||4 , soaked until soft and then sliced|
|Green onions||2 , cut in 3/4-inch pieces|
|Thin ginger slices||3 , cut in 1-inch lengths|
|Cooking sherry||1 Teaspoon|
|Soy sauce||1 Teaspoon|
Make three crosswise slashes on each side of fish; rub both sides with salt.
Place fish on plate and cover with mushrooms, bacon, onion and ginger.
Pour on soy sauce and sherry; steam in steamer for about 20 minutes.
Save fish juice and put it in a saucepan-heat and thicken with cornstarch to make a sauce; pour over fish.
Decorate with parsley and serve hot.
Allow 1 fish per person.
