Great Catch Steamed Fish

Ingredients
  Dressed fish 2 Pound (Ocean Trout Or Lake Fish)
  Salt 1⁄2 Teaspoon
  Bacon strip 3 , minced
  Dried mushrooms 4 , soaked until soft and then sliced
  Green onions 2 , cut in 3/4-inch pieces
  Thin ginger slices 3 , cut in 1-inch lengths
  Cooking sherry 1 Teaspoon
  Soy sauce 1 Teaspoon
Directions

Make three crosswise slashes on each side of fish; rub both sides with salt.
Place fish on plate and cover with mushrooms, bacon, onion and ginger.
Pour on soy sauce and sherry; steam in steamer for about 20 minutes.
Save fish juice and put it in a saucepan-heat and thicken with cornstarch to make a sauce; pour over fish.
Decorate with parsley and serve hot.
Allow 1 fish per person.
