Herring Blinis

Ingredients
  Herring fillets 4 Small
  Onion 1
  Butter 2 Tablespoon
  Bread crumbs 1 Cup (16 tbs)
  Eggs 4
  Sour cream 1⁄3 Cup (5.33 tbs)
  Shortening 1 Tablespoon
  Cranberry sauce 4 Teaspoon
Directions

Rinse the herring fillets in cold water and soak for 2 hours.
Pat the fillets dry, cut into pieces and chop.
Peel and chop the onion.
Heat the butter in a frying pan and saute the onion until translucent.
Add the bread crumbs and saute, stirring constantly.
Allow to cool somewhat.
Whisk the eggs and mix with the herring into the bread crumbs.
Mix in half the sour cream and season with salt to taste.
In a small pan heat a little of the shortening and add enough batter to cover the bottom of the pan.
Cook each blini this way frying on both sides until golden brown.
Keep warm until all the batter is used.
