Poached Fish Fillets With Soy Dressing
|Soy sauce||2 Tablespoon (Sauce)|
|Shao hsing wine/Dry sherry||1 Tablespoon (Sauce)|
|Sesame oil||2 Teaspoon (Sauce)|
|Fresh ginger slices||4 (Thin Slice)|
|Green onion with tops||2 , cut in half (Sauce)|
|Firm white fish fillets||1 Pound (Such As Cod, Halibut, Or Sea Bass, 1/2- To 3/4-Inch Thick)|
Preparation Place sauce ingredients in a small saucepan.
Whisk until blended and set aside.
Cooking Pour water into a wide frying pan to a depth of 2 inches.
Add ginger and green onions and bring to a boil.
Reduce heat so water barely simmers.
Add fish, cover, and simmer for 5 minutes or until center of fish is opaque.
Lift out fish with a slotted spatula, drain briefly, and place on a serving platter.
Bring sauce ingredients to a boil.
Drizzle sauce over fish.
