Mozzarella Marinated With Capers And Anchovies
|Mozzarella cheese||12 Ounce (Preferably Fresh)|
|Flat anchovy fillets||12 , halved lengthwise|
|Capers||6 Tablespoon, rinsed and drained|
|Fresh parsley leaves||1⁄4 Cup (4 tbs)|
|Olive oil||2 Cup (32 tbs) (Preferably Extra Virgin)|
|Plum tomatoes||3 , sliced (Fresh)|
1. Cut mozzarella into 1/4 inch slices. In a glass bowl, layer slices of mozza-rella with anchovies, capers, and parsley. Cover with olive oil. Marinate in refrigerator at least 2 days.
2. Using a slotted spoon, remove cheese, anchovies, and capers from oil.
