Mozzarella Marinated With Capers And Anchovies

Ingredients
  Mozzarella cheese 12 Ounce (Preferably Fresh)
  Flat anchovy fillets 12 , halved lengthwise
  Capers 6 Tablespoon, rinsed and drained
  Fresh parsley leaves 1⁄4 Cup (4 tbs)
  Olive oil 2 Cup (32 tbs) (Preferably Extra Virgin)
  Plum tomatoes 3 , sliced (Fresh)
Directions

1. Cut mozzarella into 1/4 inch slices. In a glass bowl, layer slices of mozza-rella with anchovies, capers, and parsley. Cover with olive oil. Marinate in refrigerator at least 2 days.
2. Using a slotted spoon, remove cheese, anchovies, and capers from oil.
