Fish En Casserole
|Haddock/Cod||2 Pound, in one piece|
|Sprouted mung beans||2 Cup (32 tbs)|
|Chopped parsley||1⁄2 Cup (8 tbs)|
|Chopped chives||1⁄4 Cup (4 tbs)|
|Snipped dill||1 Tablespoon (Fresh)|
|Lemon/1 lime||1⁄2 , juiced|
|Freshly ground pepper||To Taste|
Preheat oven to 400°.
Grease bottom of a flat baking dish large enough to hold the fish in one layer.
Mix together the mung beans, parsley, chives and dill.
Spread over bottom of baking dish.
Place fish on top.
Sprinkle with salt, pepper and lemon or lime juice.
Dot with butter.
Place in oven, uncovered, and bake for 20-25 minutes until fish flakes easily when fork is inserted into thickest part.
