Crispy Fried Fish

Ingredients
  Eggs 2
  Prepared french mustard 1⁄4 Cup (4 tbs)
  Parsley flakes 1 Teaspoon (French's Brand)
  Seafood seasoning 1⁄2 Teaspoon (French's Brand)
  Fish fillets 1 1⁄2 Pound
  Mashed potato flakes 16 Ounce (French's Big Tate Brand)
  Shortening/Oil 2 Cup (32 tbs), melted
Directions

Beat together eggs, mustard, parsley, and seafood seasoning.
Dip fish in the mustard mixture; roll in potato flakes.
Fry in hot oil or shortening 3 to 4 minutes on each side or until fish flakes easily and is golden brown
