Flsh Fillets With Anchovy Sauce

Ingredients
  Olive oil/Salad oil 1⁄4 Cup (4 tbs)
  Garlic 1 Clove (5 gm), halved
  Canned anchovy fillets 2 Ounce, drained and chopped (1 Can)
  Minced parsley 2 Tablespoon
  Lemon juice 1 Teaspoon
  Flounder fillets/Ocean perch fillets 1 Pound (Fresh / Frozen, Thawed)
  Pepper 1⁄4 Teaspoon
Directions

1. Make sauce: In small saucepan over medium-high heat, in hot olive oil, brown garlic. Remove saucepan from heat; discard garlic. Stir in anchovies, parsley, and lemon juice.
2. Meanwhile, preheat broiler if manufacturer directs. Grease broiling-pan rack on rack, arrange fish fillets; sprinkle with pepper; brush well with some anchovy sauce. Broil 5 minutes or until fish flakes easily. Arrange fish on warm platter. Pour remaining sauce over fish.
