Mackerel With Olives
|Pitted green olives||1 Tablespoon|
|Ground black pepper||To Taste (Salad Oil)|
|Black italian olives/Greek olives||1 Tablespoon|
1. Preheat oven to moderate (350° F.). Lightly grease the bottom of a shallow glass or earthenware baking dish with salad oil.
2. Stuff each mackerel with five or six green olives. Arrange the fish in the baking dish, sprinkle with a little more oil and with salt and pepper. Scatter the black olives around the fish.
3. Bake, uncovered, until the fish flakes easily when tested with a fork, about twenty-five minutes. Garnish the mackerel with lemon slices
