Poached Salmon Steak
|Chopped onion||1⁄3 Cup (5.33 tbs)|
|Chopped carrot||1⁄3 Cup (5.33 tbs)|
|Chopped celery||1⁄3 Cup (5.33 tbs)|
|Dry white wine/1/4 cup vinegar||1⁄2 Cup (8 tbs)|
|Salmon steak||3 Pound|
|Hollandaise sauce/Mayonnaise||1 Tablespoon|
1. In a large skillet heat the butter, add the vegetables and cook five minutes. Add the water, wine and seasonings and simmer five minutes.
2. Wrap the salmon in cheesecloth and place in the boiling liquid. Lower the heat, cover and simmer gently about twenty-five minutes, or eight minutes per pound.
3. Remove the salmon carefully, unwrap
