  Salt 1⁄2 Teaspoon
  Cornflour 2 Tablespoon
  Haddock fillets 800 Gram (Four 200 Gram Each)
  Egg white 1 , beaten
  Vegetable oil 625 Milliliter
  Brown sugar 1 Tablespoon
  Rice vinegar 2 Tablespoon
  Chicken stock 1 Tablespoon
  Chili sauce 1 Tablespoon
  Fresh orange juice 2 Tablespoon
  Cornflour mixture 1 Tablespoon
  Corn flour 2 Tablespoon
  Haddock fillets 800 Gram (Four Pieces, 200 Gram Each)
  Corn flour mixture 1 Tablespoon

On a plate, mix together salt and cornflour (cornstarch) then coat fish evenly, shaking off any excess.
Dip each fillet in egg white.
In a wok, heat oil.
Add fish and deep fry for 5 minutes until golden.
Drain on absorbent kitchen paper and keep warm.
In a medium saucepan, mix together sauce ingredients, bring to the boil, stirring, then simmer for 3 minutes.
Transfer the fish to a warmed serving plate and pour over sauce.
