Everyone thought I had bought this Red Simmered Fish dish from a nearby Chinese restaurant. Only after they had gobbled this Red Simmered Fish dish to their heart's content, did I disclose the secret. Here is it for you to try!
Ingredients
  Smelts 2 1⁄2 Pound
  Scallion stalks 6
  Ginger root slice 8
  Sesame oil 1⁄2 Teaspoon
  Vinegar 2 Cup (32 tbs)
  Soy sauce 1 1⁄2 Cup (24 tbs)
  Sugar 5 Tablespoon
Directions

1. Have smelts cleaned; slice scallions and ginger root. Place in a pan.
2. Add vinegar, soy sauce, sugar and sesame oil. Bring to a boil; then simmer, covered, 2 hours.
3. Drain fish, discarding liquid. Refrigerate to chill.
