Italian Style Orange Roughy

  Orange roughy fillets 1 1⁄2 Pound
  Bottled italian salad dressing 2 Tablespoon
  Margarine/Butter 2 Tablespoon
  Chopped onion 1⁄4 Cup (4 tbs)
  Sliced celery 1⁄4 Cup (4 tbs)
  Green bell pepper strips 1⁄4 Cup (4 tbs)
  Red bell pepper strips 1⁄4 Cup (4 tbs)
  Minced garlic 1 Teaspoon
  Chopped parsley 1⁄4 Cup (4 tbs)
  Italian herb seasoning 1⁄2 Teaspoon
  Rice cereal 1 Cup (16 tbs), crushed to 2/3 cup (Chex Brand)
  Corn cereal 1 Cup (16 tbs), ccrushed to 2/3 cup (Chex Brand)

Preheat broiler.
Arrange fillets on greased broiler pan; drizzle with dressing.
Broil 4 to 5 inches from heat source for 5 to 7 minutes or until fish flakes easily with fork.
In large skillet over medium heat, melt margarine; add onion, celery, green and red peppers and garlic.
Cook and stir 2 minutes or until crisp-tender.
Stir in parsley, herb seasoning and cereal.
Spoon over fillets.
Broil 1 to 2 minutes more or until topping is golden brown.
