Italian Style Orange Roughy
|Orange roughy fillets||1 1⁄2 Pound|
|Bottled italian salad dressing||2 Tablespoon|
|Chopped onion||1⁄4 Cup (4 tbs)|
|Sliced celery||1⁄4 Cup (4 tbs)|
|Green bell pepper strips||1⁄4 Cup (4 tbs)|
|Red bell pepper strips||1⁄4 Cup (4 tbs)|
|Minced garlic||1 Teaspoon|
|Chopped parsley||1⁄4 Cup (4 tbs)|
|Italian herb seasoning||1⁄2 Teaspoon|
|Rice cereal||1 Cup (16 tbs), crushed to 2/3 cup (Chex Brand)|
|Corn cereal||1 Cup (16 tbs), ccrushed to 2/3 cup (Chex Brand)|
Arrange fillets on greased broiler pan; drizzle with dressing.
Broil 4 to 5 inches from heat source for 5 to 7 minutes or until fish flakes easily with fork.
In large skillet over medium heat, melt margarine; add onion, celery, green and red peppers and garlic.
Cook and stir 2 minutes or until crisp-tender.
Stir in parsley, herb seasoning and cereal.
Spoon over fillets.
Broil 1 to 2 minutes more or until topping is golden brown.
