Baked Fish A La Spetses
|Fish fillets||4 Pound (Turbot, Whitefish, Bass, Mullet)|
|Tomatoes||4 , peeled and sliced|
|Olive oil||3⁄4 Cup (12 tbs)|
|White wine||1 Cup (16 tbs)|
|Chopped parsley||2 Tablespoon|
|Garlic||1 Clove (5 gm), crushed in a garlic press|
|Fresh bread crumbs||1 Cup (16 tbs)|
|Feta cheese slice||6 (1 Slice For Each Portion)|
1. Put fillets into a baking dish.
2. In a bowl, combine tomatoes, olive oil, wine, parsley, garlic, salt, pepper, and basil. Pour over fillets. Sprinkle with bread crumbs.
3. Bake at 375°F 40 minutes.
4. Top fillets with feta cheese slices. Broil 1 or 2 minutes.
