Whole Fish

This whole fish recipe is a rd snapper recipe. Cooked with potatoes, tomatoes, onions and bacon, this red snapper is cooked in the oven by baking. Spiced and flaored with sweet chilies, the whole fish is herbed with parsley and can be served with a side of choice.
Ingredients
  Red snapper 1
  Potatoes 1⁄2 Kilogram
  Bacon slices 4
  Sea salt To Taste
  Garlic 6 Clove (30 gm)
  Olive oil 1 1⁄2 Tablespoon
  Bay leaves 2
  Onions 2
  Tomatoes 2
  White wine 1⁄2 Tablespoon
  Pepper white 1 Teaspoon
  Sweet chillies 1 Teaspoon
  Parsley leaves 1 Teaspoon
Directions

Make a few slashed in the middle of the fish and trim the tail and the fins.
Layer a baking dish with half onions, garlic and tomatoes.
Keeping the fish on the top, insert the bacon in the cuts.
Now, cover the top with the remaining garlic, onions and tomatoes.
Place the potatoes at the side and season with salt and pepper.
Next, sprinkle the olive oil and the white wine and then add the sweet chillies.
Finally, garnish with the parsley leaves and bake in a pre heated oven for approximately 40 mins.
